yes I do get rubbing in the rear on big dips occasionally, however I have a camber kit I need to install to remedy that. I'm dropped about 1.6" all around and my rear fenders are rolled. My tires are beefy and I might not rub if I went down a tire size.
Just pay attention to the rim width and offset not the rim height when shopping. Plug your OEM and new rim into an offset calculator (google offset calculator). Mine are 18x8 +35 offset. OEM are 17x7 +55. Then you can see how much your new rims will stick out.
right where the bumper connects to the quarter panel from the inside wheel liner there is screws that hold the bumper in place... they rub either grind them or move futher back
when you take the wheel out check the bumper tabs you either have to shave them or relocate them a bit... i ran 18x7.5 on 235/40 tire i had my fenders rolled too

it was easy. but than again. i did take it of a few dozen times. all it is is a few clips on the bottom along with two screws i believe (i put in clips instead of screws bc its easier to take out a clip than a screw) and than one screw on each side right where the bumper meets the fender. than a few more clips on the bulk head. for me, 2min and the bumpers off.
